The Flight 4 - 8pm $16 

Bois de Boursan Cuvee Le Petit Oursan Blanc - Made of 100% Clairette from 30-year-old vines planted in a clay-limestone parcel in the town of Jonquières, the “Petit Oursan” Blanc is a multi-vintage blend (typically 50% from the most recent harvest and 50% from the prior harvest) raised entirely in enameled cuve. Clean, gently floral, and taut but mouthfilling, it shows subtle notes of fresh almonds and fennel.

Château Castagnac Bordeaux Superior 2022 $13 - Mostly Merlot with a bit of Cabernet Sauvignon. Bright acidity, blackberry fruit, pepper, and savory spice with a light layer of structured tannins.

Notre Dame des Pallieres Sablet Côtes du Rhône L'Olivet 2024 $16 - The Domaine’s vines of Sablet are located on the slopes overlooking the village for Grenache and are a minimum of 40 years old. The Sablet appellation is located in the east of the Côtes du Rhône valley, about 12 miles east of Orange. Very beautiful purple color, bright brilliant. Nose of fresh fruit, intense, on morello cherry, blackberry, red fruit coulis. The palate is fleshy, round, crisp, full of fruit, with matter, without hardness and silky tannins. 

Domaine de la Graveirette “Ju de Vie” Rouge 2023 $17 - This vibrant fruit-forward wine is fermented and aged exclusively in cement vats, a winemaking choice that preserves freshness and purity of fruit. The wine showcases medium body with a lively character, combining concentrated dark fruit elements with subtle herbal and floral complexity. Grenache, Merlot and Mourvèdre.

Château des Adouzes “Le Tigre” 2023, AOP Faugères $23 -  The Syrah and Grenache are vinified traditionally with destemming and 20-30 days of vatting. The wines age in concrete tanks for 12 months before blending and bottling at the château. Le Tigre red wine shows cassis and raspberry with hints of pepper and spice on the nose. The palate is structured and smooth with fresh fruit flavors. Nice acidity provides freshness on the finish.

Bonus Wines 

Clos des Rocs Macon-Loche En Pres Fôret 2024 $28 - This is not your grandmother's Chardonnay! The soils are characterized by iron-rich clay and limestone, often with up to 30cm of dense limestone pebble dispersion at the surface. The resulting wines are leaner than their counterparts in neighboring Pouilly Fuisse and carry a hint of earth, yet they are quite rich in mineral, with enough fruit density to properly support the robust structural elements. Aged in stainless steel. The result is generous yet elegant, with a pronounced saline streak and the structure to age a decade or more. Intensely mineral Macon at a steal.

Saint-Galet Châteauneuf-du-Pape 2023 $29 - Aromas of ripe red and black fruits such as kirsch, raspberry compote, and warm plum, with notable hints of the region's famed garrigue and trailing notes of licorice, and cracked pepper.

The palate is generous without heaviness, the tannins are quite fine and the flavors follow the aromas, with savory spice, and a clean, mineral‑tinged finish that keeps it balanced and highly drinkable.

Georges Lignier Marsannay Rouge 2023 $61 - The domaine is led by Benoit Stehly, nephew of Georges Lignier, who worked at the domaine for a decade alongside his uncle, before assuming control of the work in both the vineyard and the cellar in 2008. His approach is very traditional, as he seeks to achieve maximum aromatic concentration, above nearly all other characteristics, including structural or color concentration. To achieve this, techniques such as a slightly later harvest and 80% destemming are employed. At the Villages level, the wines are raised in older barrels, while the 1er Crus see 30% new oak, and the Grand Crus 50% new oak. A vein of seductive elegance runs throughout the full range of wines, inviting a complex and beautiful conversation with each glass. The sensitive palate will thoroughly enjoy this approach, a statement of respect for the grandest of traditions in Burgundy and a sublime expression of the terroir underlying some of the most renowned sites in the Cote de Nuits. Bright red. Very spicy scents of red cherry, cranberry and pomegranate, accented by positive hints of pepper and herbs. Juicy, dry and penetrating; a bit more serious today than the Bourgogne but still with enticing, pure red fruit flavors. Here the tannins are a bit granular and strict.
